Keto-Friendly Low-Carb Enchiladas

- 8 low-carb tortillas
- 2 cup shredded chicken
- 1 cup enchilada sauce
- 1 cup cheese shredded
- 1/2 cup onions chopped
- 1/2 cup bell peppers chopped
- 2 cloves garlic minced
- Salt and pepper to taste
Preheat your oven to 375°F (190°C).
In a pan, sauté the onions, bell peppers, and garlic until they're soft.
Add the shredded chicken to the pan and mix well. Season with salt and pepper.
Lay out a tortilla and spread a spoonful of enchilada sauce on it. Add some of the chicken mixture and a sprinkle of cheese. Roll the tortilla and place it in a baking dish. Repeat with the remaining tortillas.
Pour the remaining enchilada sauce over the rolled tortillas and sprinkle the rest of the cheese on top.
Bake for 20 minutes, or until the cheese is melted and bubbly.
